  • 8 large eggs
  • 1 cup (240 g) cottage cheese
  • 1 cup (100 g) shredded Gruyère cheese
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 4 slices turkey bacon, cooked and finely chopped
  • Butter or nonstick cooking spray (for greasing)

Instructions

Preheat a precision cooker bath to 172 °F (78 °C). Lightly grease six 4-oz (120 ml) silicone or glass ramekins with butter or nonstick spray.

In a high-speed blender, combine the eggs, cottage cheese, Gruyère, salt, and pepper. Blend on medium speed until the mixture is completely smooth and no curds remain.

Remove the blender lid and gently stir in the chopped turkey bacon by hand so the pieces stay intact.

Carefully divide the egg mixture among the prepared ramekins, filling each about three-quarters full. Cover each ramekin tightly with aluminum foil to prevent water from seeping in.

Submerge the ramekins in the water bath, making sure they’re fully underwater but not touching the cooker. Cook for 60 minutes, maintaining 172 °F.

When time’s up, use tongs to lift the foil-covered ramekins from the bath. Let them rest, still covered, for 10 minutes at room temperature. Carefully remove the foil—they’ll hold their shape.

Serve warm straight from the ramekins, or chill uncovered in the fridge for up to 3 days. Reheat in a microwave for 30–45 seconds until puffed and creamy.
