For the sandwich:

  • 1 lb thinly sliced deli roast beef (or home-roasted beef, thinly sliced)
  • 4 onion sandwich buns
  • 4 slices cheddar cheese (or 1 cup shredded cheddar)
  • 1 tablespoon butter (optional, for toasting buns)

For the cheddar cheese sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • Salt and pepper, to taste

For the red ranch sauce:

  • 1/2 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Dash of paprika
  • Salt, to taste
  • 2 to 3 tablespoons water (to thin the sauce if needed)

Instructions

In a small saucepan, melt butter over medium heat. Add flour and whisk constantly for about one minute to make a roux.

Gradually pour in the milk while whisking, and cook until the mixture thickens and bubbles.

Remove from heat and stir in shredded cheddar cheese until smooth. Season with salt and pepper. Keep warm.

To make the red ranch sauce, combine ketchup, apple cider vinegar, sugar, onion powder, garlic powder, paprika, and salt in a small bowl. Stir well and add water a little at a time until the desired consistency is reached.

Warm the roast beef slices in a skillet or in the microwave until heated through.

Lightly butter and toast the onion buns in a skillet or under a broiler until golden, if desired.

To assemble, spread red ranch sauce on the bottom half of each bun. Add a generous pile of warm beef. Drizzle cheddar cheese sauce over the meat, then place the top bun.

Serve warm, with extra sauce on the side if desired.
