For the Stew:

  • 1 lb (450g) beef sausage, sliced

  • 4 slices turkey bacon, chopped

  • 1 large onion, diced

  • 2 cloves garlic, minced

  • 4 cups potatoes, peeled and cubed

  • 2 carrots, sliced

  • 1 stalk celery, chopped

  • 4 cups chicken broth

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • Salt and pepper, to taste

  • 1 cup heavy cream

  • 2 tbsp all-purpose flour

  • 2 tbsp butter

  • 1 cup frozen peas (optional)


Instructions

  • In a large pot over medium heat, cook the chopped turkey bacon until slightly crispy. Remove and set aside.

  • In the same pot, add sliced beef sausage and cook until browned. Remove and set aside.

  • Add butter to the pot, then sauté diced onion, garlic, carrots, and celery until softened, about 5 minutes.

  • Stir in flour and cook for 1 minute to form a roux.

  • Slowly pour in chicken broth while stirring to avoid lumps. Bring to a gentle boil.

  • Add potatoes, thyme, parsley, cooked turkey bacon, and beef sausage back to the pot. Season with salt and pepper. Stir well.

  • Cover and simmer on low heat for about 25–30 minutes, or until the potatoes are tender.

  • Stir in heavy cream and frozen peas (if using). Simmer uncovered for another 5–10 minutes until the stew thickens and becomes creamy.

  • Taste and adjust seasoning if needed. Serve hot with crusty bread or crackers.
