Ingredients
For the Stew:

1 lb (450g) beef sausage, sliced

4 slices turkey bacon, chopped

1 large onion, diced

2 cloves garlic, minced

4 cups potatoes, peeled and cubed

2 carrots, sliced

1 stalk celery, chopped

4 cups chicken broth

1 tsp dried thyme
-
1 tsp dried parsley

Salt and pepper, to taste

1 cup heavy cream
-
2 tbsp all-purpose flour

2 tbsp butter
-
1 cup frozen peas (optional)
Instructions

In a large pot over medium heat, cook the chopped turkey bacon until slightly crispy. Remove and set aside.

In the same pot, add sliced beef sausage and cook until browned. Remove and set aside.

Add butter to the pot, then sauté diced onion, garlic, carrots, and celery until softened, about 5 minutes.

Stir in flour and cook for 1 minute to form a roux.

Slowly pour in chicken broth while stirring to avoid lumps. Bring to a gentle boil.

Add potatoes, thyme, parsley, cooked turkey bacon, and beef sausage back to the pot. Season with salt and pepper. Stir well.

Cover and simmer on low heat for about 25–30 minutes, or until the potatoes are tender.

Stir in heavy cream and frozen peas (if using). Simmer uncovered for another 5–10 minutes until the stew thickens and becomes creamy.

Taste and adjust seasoning if needed. Serve hot with crusty bread or crackers.
