Perfect for busy weeknights, meal prep, or feeding a hungry family, this dish brings the sweet, smoky, and tangy flavors of a cookout straight to your kitchen—without the mess.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 14 oz beef sausage, sliced
  • 1 small onion, diced
  • 1 red bell pepper, chopped
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1/2 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced beef sausage and cook until browned, about 4–5 minutes. Remove sausage and set aside.
  2. In the same skillet, add diced onion and red bell pepper. Cook for 3–4 minutes until softened.
  3. Stir in the rice and cook for 1–2 minutes to lightly toast it.
  4. Add chicken broth, barbecue sauce, brown sugar, apple cider vinegar, garlic powder, and black pepper. Stir to combine.
  5. Return the cooked sausage to the skillet and bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 18–20 minutes or until the rice is tender and liquid is absorbed.
  7. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and garnish with parsley if desired.

Notes

  • You can use turkey, chicken, or plant-based sausage depending on your dietary needs.

  • Customize the heat level with spicy BBQ sauce or additional chili flakes.

  • Add vegetables like corn, peas, or spinach to boost nutrition.

  • Make sure to toast the rice lightly before adding liquid for the best texture.

  • For best results, use a skillet with a tight-fitting lid to ensure even cooking.
