Instructions

Instructions:

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, milk, ketchup, Worcestershire sauce, parsley, salt, and pepper. Mix until just combined.
  3. Divide the meat mixture evenly among the muffin cups, pressing down gently to shape.
  4. Bake for 20–25 minutes or until cooked through and slightly browned on top.
  5. While the meatloaf cupcakes bake, prepare the mashed potato topping by mixing mashed potatoes with sour cream, butter, salt, and pepper until smooth and fluffy.
  6. Remove meatloaf cupcakes from the oven and let rest for 5 minutes.
  7. Transfer mashed potatoes to a piping bag with a large star tip and pipe onto each meatloaf cupcake.
  8. Garnish with optional toppings like shredded cheese, chives, or crumbled turkey bacon if desired. Serve warm.
