- 2 tablespoons butter

- Optional: shredded cheese, chopped chives, or crumbled turkey bacon for garnish

- Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
- In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, milk, ketchup, Worcestershire sauce, parsley, salt, and pepper. Mix until just combined.
- Divide the meat mixture evenly among the muffin cups, pressing down gently to shape.
- Bake for 20–25 minutes or until cooked through and slightly browned on top.
- While the meatloaf cupcakes bake, prepare the mashed potato topping by mixing mashed potatoes with sour cream, butter, salt, and pepper until smooth and fluffy.
- Remove meatloaf cupcakes from the oven and let rest for 5 minutes.
- Transfer mashed potatoes to a piping bag with a large star tip and pipe onto each meatloaf cupcake.
- Garnish with optional toppings like shredded cheese, chives, or crumbled turkey bacon if desired. Serve warm.
