Ingredients
- 1 lb ground beef
- ½ onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 tsp Italian seasoning
- Salt & pepper to taste
- 8 oz egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- ¼ cup turkey bacon, cooked & crumbled (optional topping)
- 2 tbsp green onions or parsley, chopped (optional garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the egg noodles according to package directions until al dente. Drain and set aside.
- In a skillet, cook the ground beef over medium heat until browned. Add diced onion and garlic, and cook until softened.
- Stir in tomato sauce, Italian seasoning, salt, and pepper. Let it simmer for about 5–7 minutes.
- In a separate bowl, mix sour cream and cottage cheese together until smooth.
- In a greased 9×13-inch baking dish, layer half of the noodles on the bottom.
- Spread the cheese mixture over the noodles evenly.
- Add the remaining noodles on top of the cheese layer.
- Pour the meat sauce over the top layer of noodles and spread evenly.
- Sprinkle shredded cheddar cheese over the top of the casserole. Optionally, sprinkle crumbled turkey bacon.
- Bake uncovered for 20–25 minutes or until cheese is melted and bubbly.
- Garnish with green onions or parsley if desired. Let rest for 5 minutes before serving.
