This Easy Hobo Casserole layers seasoned ground beef, tender potatoes, creamy soup, and melty cheddar cheese into the ultimate one-dish family dinner. Cozy, satisfying, and simple to make, it’s comfort food at its best—perfect for busy weeknights or meal prepping.


Ingredients

1 lb ground beef (or ground turkey)

1 small onion, diced

45 medium russet potatoes, peeled and thinly sliced

1 (10.5 oz) can cream of mushroom soup

1 (10.5 oz) can cream of chicken soup

½ cup milk

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

1 tablespoon olive oil

Nonstick cooking spray


Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick cooking spray.

In a skillet over medium heat, heat olive oil and cook the diced onion until softened, about 2–3 minutes. Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess grease. Season with garlic powder, onion powder, salt, and pepper.

In a small bowl, mix the cream of mushroom soup, cream of chicken soup, and milk until combined.

Layer half of the sliced potatoes in the bottom of the prepared baking dish. Sprinkle with a little salt and pepper.

Spread the cooked beef and onion mixture evenly over the potatoes.

Pour half of the soup mixture over the beef layer.

Add the remaining sliced potatoes on top. Pour the rest of the soup mixture over the top layer of potatoes.

Cover with foil and bake for 60 minutes.

Remove foil, sprinkle shredded cheddar cheese over the top, and bake uncovered for another 10–15 minutes until the cheese is melted and bubbly.

Let cool for 5–10 minutes before serving.

  • Use a mandoline slicer for quick, even potato slices.

  • Fully cook and season your beef for richer flavor.

  • Cover the casserole tightly during baking to ensure tender potatoes.
