Ingredients
- 2 cups mashed potatoes (cold, leftover mashed potatoes work great)
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup sour cream
- 2 tablespoons chopped chives or green onions
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
2️⃣ Lightly grease a muffin tin with butter or cooking spray.
3️⃣ In a large mixing bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan cheese, sour cream, and chopped chives. Mix until well combined.
4️⃣ Season with salt and black pepper to taste.
5️⃣ Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
6️⃣ Bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.
