This Garlic Parmesan Chicken and Potatoes recipe features juicy chicken breasts and tender baby potatoes tossed in a blend of olive oil, garlic, herbs, and Parmesan cheese. Baked until golden or simmered in a slow cooker, it’s a comforting, low-effort meal perfect for weeknights, meal prep, or feeding a hungry family. The rich garlic parmesan sauce ties everything together, creating a crave-worthy dish that’s both simple and flavorful.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 ½ lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine olive oil, garlic, oregano, basil, paprika, salt, and pepper.
  • Add chicken breasts and potatoes to the bowl, tossing to coat everything evenly with the seasoning mixture.
  • Transfer the chicken and potatoes to a greased baking dish or a sheet pan in a single layer.
  • Sprinkle the Parmesan cheese evenly over the chicken and potatoes.
  • Bake for 35-40 minutes or until the chicken is cooked through and the potatoes are tender.
  • If desired, broil for 2-3 minutes at the end for a golden, crispy top.
  • Remove from the oven and sprinkle with chopped parsley before serving.

Notes

  • For best texture, avoid overcrowding the pan during baking.

  • Add Parmesan cheese during the last 30 minutes in the crockpot for optimal flavor.

  • For a creamy twist, stir in cream cheese or heavy cream near the end of cooking.

  • Chicken thighs are a great substitute if you prefer a juicier, more flavorful cut.

  • Garnish with fresh parsley and serve with bread or a light salad for a complete meal.
